Apple Fritters
 

Ingredients
1 Beaten Egg
1 Cup Milk
1 Cup Finely Chopped or Grated Unpeeled Cored "Champagne Apples"
1/4 Cup Sugar
1/4 Teaspoon Salt
1 Teaspoon Grated Orange Peel
3 Tbs. Orange Juice
1/2 Tea. Vanilla
2 Cups All Purpose Flour
1 Tbs. Baking Powder
Vegetable Oil for Frying
Sifted Confectioners' Sugar

In mixing bowl, combine beaten Egg, Milk, Chopped Apples, Sugar, Salt, Orange Peel, Juice, and Vanilla. Stir together Flour and Baking Powder, fold into egg mixture stirring just until all flour is moistened. Drop batter by rounded teaspoon into Hot Oil (350 degree), Fry until deep golden brown – about 3 - 4 minutes, turning once. Drain fritters thoroughly on paper towels, roll in Sugar or sift Sugar over tops. "Yum"!
